Pomegranate-Glazed Root Vegetables

INGREDIENTS

Granatti Pure Pomegranate Juice

PREPARATION

Toss vegetables with olive oil, salt, and pepper. Roast until tender and caramelized. Meanwhile, simmer Granatti Pomegranate Juice until reduced by half and syrupy. Drizzle over the vegetables near the end and return to the oven briefly to set the glaze.

Pro Tip

Reduce the juice ahead of time — a properly thickened glaze clings to the vegetables instead of pooling.
